QUALIFICATIONS AND JOB DESCRIPTION


A great opportunity to work in an exciting Signature Restaurant, The Peninsula Istanbul is looking for its Restaurant Pastry Chef to manage the day-to-day operation of the pastry in the restaurant.

Key accountabilities

 
  • Ensuring production in the restaurant at high standards 
  • Overseeing all pastry R&D activities creatively and innovatively and developing new recipes.
  • Maintaining and setting adherence standards for product quality, consistency, presentation, portioning, garnishment, and utilization goals
  • Coordinating and directing all aspects of the Signature Restaurant pastry & bakery operation and collaborates with the Food and Beverage team and all necessary stakeholders to achieve marketing and business goals and objectives.
  • Maintaining up to date technical worksheets, recipes and costings and ensures understanding and compliance from team members.
  • Controlling the ordering and requisitions to achieve budgeted costs.
  • Ensuring the hygiene and cleanliness of the pastry kitchen and storage areas with the highest standard of food safety.

 

General requirements

 
  • Minimum 4 years of experience in the same position and in total 8 to 10 years of experience in a la carte restaurant kitchens, luxury hotel at high standards; Michelin or 50 Best restaurants will be plus.
  • Extensive pastry technical knowledge and current culinary trends.
  • Ability to maintain an extremely sanitary environment while working.
  • High level of creativity.
  • Paying attention to details and excellence.
  • Ability to communicate effectively with the team. 
  • Good Turkish and English written and verbal communication skills.

The Peninsula Istanbul will offer spectacular views of the Bosphorus Strait, the meeting point of East and West. Located in the historic Karaköy district, the hotel will feature 177 opulent guestrooms and a glamourous rooftop, forming part of the Salıpazarı Port re-development, which also features a cruise terminal, public squares, restaurants and museums. The Hotel is currently scheduled to open at the end of 2022.
